Background
A 6-year-old artisan bakery chain in Lima, Peru, with 5 locations producing French-style baguettes, sourdough, and viennoiserie. Family-owned, with the two co-founders splitting operations and finance roles. Each location bakes 200–250 items daily on 600×400 mm trays in shared MIWE combi ovens.
The Challenge
