Background

A 4-star business hotel in Dubai with full breakfast service for 250 rooms. Pastry section produces 80–120 trays of viennoiserie daily for the buffet, plus 30–50 sheet pans for à-la-carte breakfast items. Banquet operations add 50–80 trays of dessert items on a typical evening.

The Challenge

Previously operated with a 5-year-old Hobart AMX that the pastry chef described as "constantly fighting us." Two specific problems:

  • 500×500 rack didn't fit their 600×400 trays. Pastry team hand-washed all baking trays separately — 2 hours of dedicated labor daily.
  • Dubai's hard water (450 ppm) was scaling the Hobart's heating elements, requiring annual $800 descaling service.

F&B director estimated that between hand-washing labor and Hobart service costs, the operation was losing $30,000+/year on dishwashing alone.

Why They Chose JD-3

Configuration

They ordered the "Water Treatment Module" tier at $4,900 plus optional heat-recovery upgrade ($200 add-on) for $5,500 total FOB. Single unit installed replacing the Hobart.

Implementation

Hotel was renovating the pastry section anyway — the JD-3 was incorporated into the renovation. Installed by hotel maintenance team with our remote support. Two-hour install, plus 30 minutes operator training for the pastry chef and two commis.

Results (8 months post-deployment)

  • $28,000/year labor savings (eliminated 2-hour daily hand-washing for trays)
  • Water-treatment module performed as specified: no measurable scale buildup at 8-month inspection

Lesson Learned

For hard-water markets (Middle East, Mediterranean, parts of US Southwest), the water treatment module pays back in < 12 months. Without it, even premium dishwashers degrade rapidly in these conditions.
