The Cleaning Challenge

Large professional bakeware — Pullman loaf pans, charlotte molds, brioche pans (the tall fluted ones), terrine molds, savarin rings, kugelhopf molds — are the items that don't fit in any standard dishwasher. They are also the items that develop the worst residue because they sit at the back of the kitchen unrinsed until end-of-day. Pullman loaf pans (33 × 11 × 11 cm) are particularly tough — they have closed sides, often a lid, and the residue inside is impossible to reach with a sponge if the lid is on.

How the JD-3 Handles It

The JD-3 chamber accommodates Pullman pans (up to 33 cm long) when loaded with the lid removed. The standard rack supports them upright on their long edge so the spray reaches the interior bottom directly. Charlotte and brioche molds load inverted (channels down) in the standard rack. Their decorative interior surfaces clean better in a dishwasher than by hand because the spray reaches the corners that fingers can't. Terrine molds (the rectangular ones used for pâtés) load upright. Their straight walls make them easy targets for the wash pattern.

At 35 cm, it's borderline. The JD-3 chamber interior diagonal is approximately 85 cm so it fits diagonally. Standard orientation: too long.

Tin-plated French brioche pans — they'll rust if I leave them wet?

Yes — like any tin-plated item, dry promptly after the cycle. The JD-3 final rinse heats them, and they air-dry quickly when you open the hood, but don't leave them inside overnight.

Decorative copper madeleine molds?

Hand-wash these. Commercial dishwashers will dull the exterior copper and degrade the tin lining faster than hand-washing. Worth the manual labor.

Cast iron pans (Le Creuset, Lodge)?

Hand-wash. Commercial dishwasher cycles will strip the seasoning from cast iron, which takes weeks to rebuild.
