The Pre-Installation Checklist Most Bakeries Skip — What You Should Have Ready Before Your Commercial Dishwasher Arrives

Why this checklist matters more than the spec sheet

Bakery owners who buy a commercial dishwasher typically read the spec sheet two or three times before committing — power rating, throughput, footprint. They rarely read the installation requirements at the same level of detail. The result: the truck arrives on Day 90, the licensed electrician shows up, looks at the panel, and says "you don't have capacity on this circuit, I need to run a new line from the main panel — $400 in labor, $80 in materials, can I get to it next Wednesday?"

That conversation is avoidable. Every item below is something your contractor can verify in 20 minutes of walk-through, BEFORE you sign the purchase order. The numbers below are for the V-TAI JD-3 (380V/3N/50Hz, 13 kW). Numbers for other models scale similarly; check the spec sheet for exact values.

Item 1: Dedicated 32 A type-C breaker, 380V/3N/50Hz (or local equivalent)

The JD-3 draws 13 kW total — 9 kW for the heating element plus 0.75 kW for the pump plus controls. Working current is 21.5 A. A 32 A type-C breaker provides the headroom needed for the heating element's inrush.

Type C, not type B: Type-B breakers trip at 3–5× rated current; type-C trips at 5–10×. The heating element's startup current spike is enough to nuisance-trip a type-B. If you ask your electrician for "a 32 A breaker," you may get type-B by default. Specify type-C explicitly.

Dedicated circuit, not shared: The dishwasher must NOT share a breaker with a spiral mixer, deck oven, fryer, or anything else that pulls more than 2 kW intermittently. Combined inrush will trip the breaker. The line from the main panel to the dishwasher should serve nothing else.

RCD (residual current device): EU and most modern electrical codes require an RCD on any wet-area circuit. 30 mA trip threshold is standard. Have your electrician confirm.

Alternative voltages: The JD-3 ships with 380V/3N/50Hz by default. Specify at order time if your country needs 400V/50Hz (most of EU is actually 400V on three-phase, not 380V — the difference matters for the heating element) or 220V/60Hz (Mexico, parts of South America, the Philippines). Wrong voltage = burned heating element on first cycle.

Item 2: Cold-water inlet — G 3/4" thread, 2.5–6 kg/cm² pressure

The supplied inlet hose has a G 3/4" female thread on the building side. If your bakery's water supply terminates in a 1/2" tap (common in older buildings), you need a 1/2"→3/4" adapter. Have the plumber install it before delivery.

Pressure: Below 2.5 kg/cm² (~36 psi), the final rinse won't reach proper spray pressure and trays will come out with detergent residue. Above 6 kg/cm² (~85 psi), the inlet solenoid valve may fail prematurely. In most municipal supplies you're fine — but if your bakery is at the top of a tall building or on a low-pressure rural line, install a booster pump (~$200–$400) or a pressure regulator (~$50–$100) respectively.

Inlet temperature: The minimum allowed is 10°C. Below that, the inlet thermistor throws an error and the machine refuses to start. The maximum allowed is 60°C — above that, the rubber inlet hose degrades over 12–18 months. If you have free pre-heated water at 50–60°C from a heat-recovery loop or solar source, connecting it saves 15–25% on heating. If not, use cold mains.

Item 3: Drain — G 1½" hose, ≤ 1.5 m to floor drain

The drain hose is the install-day item that surprises operators most often. The JD-3 drains at ~25 L/min through a G 1½" hose for about 8 seconds per cycle. That hose must travel no more than 1.5 m to either:

  • A floor drain within the kitchen (gravity drain, simplest)
  • A wall drain via a siphon (slightly more complex)
  • A drain pump if neither is available (requires its own power)

Operators often discover on install day that the only floor drain is 4 m away across a tiled floor. The plumber has three options: cut the tile and lay new drain pipe ($800–$1,500), install a sump pump under the dishwasher ($150–$400, plus annual maintenance), or — worst — leave the hose loose to a bucket (NEVER an acceptable solution; it's a slip hazard and a health-code violation).

Drain gradient: The hose must run downhill toward the drain. Even a slight uphill section causes wastewater to back up into the wash chamber, which the operator notices as a "slow cycle" or "drain not emptying." This is mechanical; no firmware fix exists.

Item 4: Ventilation for the rinse-cycle steam plume

A hood-type machine releases steam each time the hood opens — about 0.3 m³ of warm humid air per cycle. Over 30 cycles per hour, that's 9 m³/hour of condensation feeding into your bakery's air.

Without ventilation, this manifests as: ceiling condensation drip-marks after 2–3 months, peeling paint above the dishwasher, HVAC running 15–20% longer to maintain temperature, and — in winter in cold climates — frost on adjacent windows.

The fix is cheap: a kitchen exhaust fan rated 200–400 m³/h installed in the wall or ceiling within 1–2 m of the dishwasher, vented outdoors. About $80–$200 in equipment plus installation. Full commercial Type-I hoods are overkill for a tray washer; they're designed for grease-laden cooking exhaust.

Note: hood-type washers (like the JD-3) need much less ventilation than conveyor or pass-through machines. If you're evaluating a conveyor model, expect to spend $1,000–$3,000 on a proper exhaust hood.

Item 5: Floor space, clearance, and hood-open vertical

The JD-3 footprint is 0.65 m² (804 × 816 mm). That's the absolute minimum. To open the hood, you need:

  • 200 mm rear clearance for air and the steam-recovery vent
  • 100 mm side clearance on at least one side (preferably both)
  • 2,115 mm vertical clearance when the hood is open. This is the item operators miss most often, especially in basements or under low-clearance soffits.

Measure your ceiling, your soffits, your overhead pipes. If your kitchen ceiling is 2.0 m (a frequent issue in renovated retail spaces), the JD-3 won't fit. Solutions: lower the floor, raise the ceiling, or choose an undercounter model.

Door swing: The JD-3 hood opens upward, not outward, so you don't need lateral swing clearance — but adjacent shelving must clear the hood's open position by at least 50 mm.

Item 6: Floor — level, drainable, rated for 165 kg gross

The JD-3 weighs 145 kg empty, 165 kg with water in the wash tank. Most commercial kitchen floors handle this without issue, but a few specifics:

  • Level within 5 mm across the footprint. A tilted machine has uneven water levels in the wash tank, which the float sensor reads incorrectly. Use a spirit level when positioning. Adjustable feet are supplied.
  • Drainage gradient toward floor drain. If there's a leak (a gasket fails, a hose pops off), water needs to flow to the drain, not pool under the machine. Ideally the floor slopes 1–2% toward the floor drain.
  • Surface material: Sealed concrete, quarry tile, or commercial vinyl. Avoid hardwood, carpet (yes, this exists in some retail bakeries), or unsealed concrete. Splash from spillover will damage the floor over years.

Item 7: Hot-water decision — pre-heated inlet or cold mains?

This is the most strategic of the eight items because it affects operating cost long-term, not install-day cost.

Cold inlet (default): Simplest. The machine's internal 9 kW heating element brings water from ambient to 60–65°C wash, then ≥82°C final rinse. Energy cost: roughly $0.12–$0.30 per cycle in most countries, depending on local electricity rates.

Pre-heated inlet (50–60°C): Saves 15–25% on per-cycle energy. Makes sense if you already have a heat-recovery loop from an oven, a solar thermal system, district heating, or any source of essentially-free hot water. Doesn't make sense if you'd be installing a dedicated electric water heater to feed it — you'd just be moving the heating from inside the machine to outside, with no net gain.

Rule of thumb: if your hot-water source is already paid for (waste heat, solar, district), connect it. If you'd be paying to heat it, don't bother.

Item 8: Isolated circuit, isolated decisions

Even after the dedicated breaker is installed, operators sometimes plug the dishwasher into a power strip shared with a planetary mixer or a deck oven via convenience. Don't.

The point of a dedicated breaker is to isolate the dishwasher's inrush from other equipment's inrush. Combined inrush trips even a 32 A breaker. Symptoms: the breaker pops "randomly" but only during morning prep when everything starts at once. The fix is awareness — train staff that the dishwasher's outlet is for the dishwasher only.

This is the cheapest of the eight items (free) and the most commonly violated.

What it looks like when all eight are handled

Install day, site-ready: the delivery driver wheels the JD-3 into place on a pallet jack. The operator connects the supplied G 3/4" inlet hose to the wall tap, runs the supplied G 1½" drain hose to the floor drain 1 m away, plugs in the supplied 32 A power cord to the wall outlet, levels the four feet with a spirit level, fills the tank, runs a hot rinse cycle to verify ≥82°C, and runs the first real load 25 minutes after the truck pulled up. Do I need a ventilation hood above the dishwasher?

Strongly recommended but not legally required in most jurisdictions for a hood-type machine (the hood already contains most steam). The 30 s drying cycle releases a small steam plume each time it opens. Without ventilation, the bakery's ceiling will develop condensation over months and HVAC will work harder.
